Steel Cut Oatmeal

Here are the ingredients you will need:

– 1 cup steel cut oats

– 2 cups of unsweetened almond milk

– 2 cups of water

– 1/3 cup dried pomegranate

– 1/3 cup dried blueberries

– 2 table spoons of almond slices

– dash of cinnamon and vanilla extract

In a medium sized pot, boil 2 cups of water and 2 cups of almond milk. Once it comes to a boil, add in the steel cut oats, dried blueberries, dried pomegranate, a dash of cinnamon and a few drops of vanilla extract. Let it simmer until you get the consistency you want.

Makes 4 servings

135 calories per serving

44.5 grams of carbohydrates (mostly fiber)

13.5 grams of sugar (from fruit)

6.5 grams of protein

5.8 grams of fat (good fats)

Have this with 6 tbs of liquid egg whites (out of the carton) to add an additional 50 calories and 10 grams of protein to your breakfast!

Total breakfast is under 200 calories and will keep you feeling full with fiber and protein until you have time to get a healthy snack 2-3 hours later!

If you’re on the go in the morning , make it ahead of time and keep it in a container in your fridge!
